Aebleskiver are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to pancakes crossed with a popover, Aebleskiver are solid like a pancake but light and fluffy like a popover.
Aebleskiver are not sweet themselves but are traditionally served dipped in raspberry, strawberry, or blackberry jam and sprinkled with powdered sugar. You may also stuff with applesauce. Always the chocolate lover, I vote to drizzle with chocolate!
Aebleskiver are cooked on the stove top by baking in a special pan with several hemi-spherical indentations in the bottom of the pan. Pans are usually made of cast iron, allowing good heat conduction. We paid retail for one of our pans, then Michael found a nearly new Aebleskiver pan at Goodwill for a few dollars!

Warm up your kitchen with the scent of apple and cinnamon with just a touch of ginger and nutmeg. Just cut the butter in and pour over your favorite apples. Michael likes a little apple cider poured over the apples just before you add the mix to make that rich syrup in the bottom of the pan. Crispy, tender and juicy all at the same time.
